Crossing the Bridge Noodles - 过桥米线

Food prep for Kunming’s famous “crossing the bridge noodles” (过桥米线), waiting for the hot oil to arrive in which you first cook the meats, then the veggies, and the rice noodles last. The interesting name supposedly comes from a love story: a man was studying for the imperial exam on an island so his loving wife would cross the bridge to bring him food, but by the time she crossed, the noodles would be cold and soggy, so she used hot oil to keep the warmth and added all the ingredients on arrival.
